Ganache

A rich, smooth, velvety concoction of Callebaut Chocolate, Butter & Cream available as Dark, Milk or White. Ganache is delicious in and on cakes and cupcakes. A firmer Ganache is used under fondant for a sharper look.

American Buttercream

American Buttercream is the best icing to use for Sculpted Novelty Cakes. It has a higher sugar:butter/copha ratio but is still light & fluffy. It colours & flavours well and maintains it shape in the heat!

It’s a good icing to use if you dislike fondant but do want decorations made from fondant, gum paste or chocolate on your cake as it doesn’t need to be refrigerated. It can also be used under fondant, rather than Ganache, for a softer look with rounded edges.
