Great Lakes Food Trail NSW

The Great Lakes Food Trail NSW gifts me opportunities to get out of my comfort zone on many levels.

I catch up with friends on their farms & meet new farmers growing weird & wonderful local produce! Then I take it all home & begin the process of recipe creating, trialling, tasting, sharing for feedback & then baking & decorating the final product. It is a labour of love that makes my heart sing! 

Many delicious recipes have become permanent menu favourites over the years to be enjoyed at Country Palings Petals & Pots Cafe & Gifts Green Point, some are for Food Trail days & others you are enjoying at the Good Food Store. 

This Pumpkin Honey Ginger recipe is so versatile. It is gluten free and refined sugar free (can be dairy free) and works as muffins, a slice and cake. It is delicious paired with the Cheesecake I created with Candied Buddha’s Hand, Pumpkin & Ginger. The pumpkin and ginger are from Gate and Bee Farm in Coomba, whilst the Buddha’s Hand is from One Goose Farm in Shallow Bay. 

The inspiration is from the Russian Easter “cheesecake”, Pashka served with Kulich. I used to make this at Twocan Restaurant many moons ago. Unfortunately, I was unable to buy Tvorog from Burraduc Farm but I adapted my Vanilla Bean cold-set cheesecake recipe to Lemon & folded in the candied fruits. It is smooth and silky with zingy bites of the fruit, vegetable and spice in each delicious mouthful.

Pashka is spread on Kulich for Easter breakfast. My Pumpkin Honey Ginger recipe is the perfect base for the cheesecake. Spread it over a muffin at the Good Food Store or order it as a cake. It features Burraduc Farm Buffalo Milk Yoghurt and Raw Local Honey from Buladelah. This is a creation that I hope you enjoy and is popular enough that I can continue to make it.
